Kale is a Health Food Powerhouse

 

But there are a few things you need to know about it...

There is always a level at which you enter the kitchen. Bringing awareness to your emotional thermostat, your current skill level and what your intention and goal is will help you have a more present experience.

Kale has an enzyme that needs to be broken down before ingested, or else it can be very hard on digestion. 

When cooking kale that enzyme gets broken down. You’re good to go. 

But did you know, you can also break the enzyme  down by simply massaging it with your hands and adding a bit of citrus or apple cider vinegar. 

Question: What is the best way to prepare Kale? 
Answer: Tear it off the stock, add citrus (lemon), massage it with vigor. 

This is one of my favorite ways to prepare kale! You can use any kind of kale you want, curly, dinosaur or whatever other kind you find out there. Stretch your fingers and prepare to knead.

Pro Tip: When you bring Groceries Home from the store or produce in from the garden, wash and prep them for consumption before they ever go into the fridge and store them at eye height in a clear storage container like a glass mason jar or stasher bag. You are more likely to not waste food this way.

ingredients

1 bushel of kale 
1 freshly squeezed lemon juice
1 whole avocado
¼ cup nutritional yeast
*Optional- 2 cloves garlic, minced & 2 teaspoons olive oil

Directions

  1. Tear or cut kale off of stock

  2. Add citrus (lemon) or vinegar

  3. Massage with vigor….keep massaging as though it's been a stressful day for the kale 

  4. Add an avocado and continue the massage until mixed

  5. Add nutritional yeast 

  6. Salt to taste 

  7. *If adding garlic Mince garlic 

  8. Heat olive oil on medium/high heat  

  9. Saute garlic until fragrant 

  10. Stir into pre made salad

  11. Kosher salt and freshly ground black pepper, to taste

Whenever possible buy organic, from a local farmer or even better grow yourself. If buying, remember to buy bulk items when available and bring your own glass or reusable containers, they will tare (aka weigh the jar/container so you don’t pay extra weight cost associated to the commodity you are buying).

Simply write the weight on the bottom of the jar so they know what to subtract at checkout. 

Avoid plastic produce bags, instead grab a few of those mini paper bags to the checkout bagging area or bring your own reusable product bags from home. And remember a reusable bag or basket to put all your nutritious yummy items in.
